This week we feature his recipe for Mexican Chicken
Divan. This dish is prepared a day ahead of time so that it makes dinner a breeze
the next day. Mexican Chicken Divan is super for potluck suppers and holiday parties. This
recipe makes 4-6 servings but for a larger crowd just double the recipe!
What you need:
- 2 cans (10 3/4 ounces each) of condensed cream of chicken
soup
- 1 cup of milk
- 2 small cans ( 4 ounces each) green chile salsa
- 1/4 teaspoon of ground allspice
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cinnamon
- 12 corn tortillas, cut into 1/2 inch wide strips
- 4 cups cooked, diced boneless, skinless chicken breasts
- 2 medium green bell peppers, stemmed, diced, and seeded
- 12 small fresh mushrooms, quartered
- 1 pound grated Cheddar cheese
What you do:
- In a bowl, blend the soup, milk, salsa, allspice, nutmeg,
and cinnamon together. Layer the tortilla strips into the bottom of a casserole or
baking dish, cover with half the green peppers, and half the soup mix.Spoon on half the
soup mix. repeat the layers with the remaining ingredients, sprinkle with cheese,
cover, and refrigerate for at least 24hours.
- When ready to bake, position a rack in the center of the
oven and preheat to 400 degrees. Bake for about 30 minutes, or until the cheese has
melted. remove from the oven and serve.
