Our first cookie recipe is brought to us from cookbook
author and chef Gregg Gillespie. He wrote the incredible book 1001 Cookie Recipes. Gregg
has every recipe you could ever want- including the ones from your grandmother's cookbook
and numerous brownie recipes. 1001 Cookie Recipe is over 400 pages and includes a color
photo for each cookie recipe.
 Gregg's Vanilla Sugar
Cookies are great for the holidays and very versatile. They can be made into round shapes
or for the holidays, into any cookie cutter you desire. They also can be decorated. The
Vanilla Sugar Cookie recipe can also be used all year around- it's a super basic recipe
for Valentine's Day
cookies, Easter
cookies, Halloween
cookies etc...
Vanilla Sugar
Cookies
What you need:
- 2 1/2 cups of all- purpose flour
- 1 teaspoon of baking powder
- Pinch of salt
- 1 cup of butter, at room temperature
- 1 cup of granulated sugar
- 2 large egg yolks
- 1 1/2 teaspoons vanilla extract
- Granulated sugar for sprinkling
What you do:
- Combine the flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar. beat in the egg
yolks. Beat in the vanilla extract. Gradually blend in the dry ingredients. Cover and
chill for one hour.
- Preheat the oven to 375 degrees. Lightly grease 2 baking
sheets.
- On a floured surface, roll out the dough to a thickness of
1/4 inch. using a 2-inch cookie cutter, cut out cookies and place 1 inch apart onto the
prepared baking sheets.
- Bake for 10-12 minutes, until lightly colored. Sprinkle
granulated sugar over the hot cookies and transfer to wire racks to cool.

 This recipe comes from a
member of our momscooking community, Susan McNeil, who donated this recipe as part of our cookie collection. She says,
"I am married with three grown children. My hobbies are baking and sewing. This
cookie recipe is my favorite because it isn't too sweet and goes great with coffee or
milk. You could find these cookies up in Syracuse in all the Italian bakeries, but since
moving to Georgia , they are impossible to find."
