ggillespie.jpg (4208 bytes)This week's Dessert of the Week features Coconut Chocolate Balls.  This delicious recipe comes from the popular cookbook author and chef Gregg Gillespie the author of 1001 Chocolate Recipes.

Gregg's book 1001 Chocolate Recipes has recipes for cookies, cakes, tarts, candy and more.  It's a chocoholics dream come true!

Coconut Chocolate Balls
Makes 1 1/2 pounds of candy
Chill time: 1 hour

What you need:

  • fastrecipes.gif (3252 bytes)8 ounces of milk chocolate, grated or finely chopped
  • 4 ounces of semisweet chocolate, grated or finely chopped
  • 8 ounces flaked coconut
  • 2 cups rice crispy cereal

What you do:

  1. giftmaking.jpg (15821 bytes)Line a baking sheet with waxed paper.
  2. In the top of a double boiler over simmering water, melt the chocolates, stirring until smooth.  remove from the heat.  Stir in the coconut and cereal.
  3. Butter or oil your hands and roll tablespoons of the mixture into small balls.  Place the balls on the prepared pan.  Chill 1 hour or until firm.

Vanilla Sugar Cookies

Gregg's Vanilla Sugar Cookies are great for the holidays and very versatile. They can be made into round shapes or for the holidays, into any cookie cutter you desire. They also can be decorated. The Vanilla Sugar Cookie recipe can also be used all year around- it's a super basic recipe for Valentine's Day cookies, Easter cookies, Halloween cookies, Christmas cookies etc...
