 I love to bake.
I really do. The only thing I like better than baking is eating what I have baked.
Gregg Gillespie's book 1001 Muffins,
Biscuits, Doughnuts, Pancakes, Waffles, Popovers, Fritters, Scones and Other Quick Breads
is just delicious. Gregg has written a glorious salute to quick breads. His
recipes are easy to prepare, yummy to eat, and inspires everyone to take out their baking trays. 1001 MUFFINS is a beautiful book.
Each recipe is accompanied by a beautiful color photo of the finished product. Since
there are 1001 recipes in Gregg' s book you get the idea of how many photos there are.
Gregg Gillespie has been baking since seventh grade. Between a
home economics class he had to take in school and his baking parents, Gregg has developed
into one of America's foremost bakers and cookbook authors. Currently he has over
4,000,000 books in print and is always on the look out for writing another great book.
He has a
quick bread for every occasion. From blueberry muffins to applesauce biscuits Gregg
covers it all. He has terrific recipes for pancakes, I like the orange ones : ) and
adds some fun to breads with his Coconut-Lemon bread.
This is one book for everyone. To tell you the truth, I get hungry just leafing
through this delicious cornucopia of marvelous recipes!

Your book 1001 Muffins cookbook is not only gorgeous, with a photo for every
recipe, but includes so many great recipes. I tried your recipe for Fresh Blueberry
Muffins and everyone loved them! What cultivated your love for cooking and especially for baking?
Gregg:
My baking career started at PS60 in Buffalo New York, when at the age of 7 all the
students in my class had to take a home-ec class--or at least something like that--and I
learned how to make refrigerator cookies. After that ,I have a mother and father who were
both cooks and bakers, I learned the English way of cooking. At home I frequently would go
into the kitchen, start a project, and my parents would have to come out and finish the
project I started.
Sue:
You have written other books along with 1001 Muffins and have over 4,000,000
copies of your books in print today. How do you decide what kind of book to write?
Gregg:
Surpassingly enough, I write what I like. There has two exceptions, my "1001
Chocolate" and the "1001 Snacks" were publisher requests.
With over four million recipes in file, it does become difficult to determine which I will
work on.
Sue:
If you could have only one meal what would you have : )?
Gregg:
Twenty years ago, it would have been anything with lamb. Today, I have developed
a great liking for soup.
And the one that I have created that I like the best is a Chicken soup
with barley and carrots.
Sue:
I really liked how you included baking basics in your book. This section works to
make home baking both easy and fun. What do you think about the "instant" baking
products on the market like Bisquick, cake mixes etc...?
Gregg:
Having been in both the retail and wholesale side of the marketplace, I shy away from
anything that is prepared.
For the most part, if I can't make it, I don't eat it. I
have found and/or suspect that the commercial processors and manufacturers of foods, put
things in preparations that you and I would rather not know about.

chicken. She could have used your book 2001 Chicken Recipes. What has inspired
you to write this amazing cookbook and what is your favorite way of preparing and
eating chicken?
